Origin 20 | Brewing Stronghold
A true celebration of our values; incredible quality coffee and long-standing, impactful relationships, Stronghold has been part of our collection since 2019, bringing together the best of Brazil and Peru in a darker, more traditional roast. Whilst a common favourite for espresso brewing, the approachable, familiar nature of Stronghold means tastes consistently great, however you like to brew.
Stronghold
The Brazil component in Stronghold is a regional blend, naturally processed, with a cup score of 83—bringing a high-quality, accessible coffee to the blend with a chocolatey, sweet and nutty profile. The Peruvian component is a washed coffee with a heavy, jammy body that balances the final cup, sourced through a direct trade partnership.
Producers
Brazil is one of the leading coffee producing countries in the industry, with most producers owning big lands with high yield coffee, making it harder for smaller coffee growers to access the speciality market. This is why we have chosen to work with an exporting partners that provides a platform for producers to sell their coffee in the speciality market, and training to elevate and ensure great quality.
The Peru component of Stronghold is sourced from Las Chirimoyas, a small farm owned by Simon Brown and Merlith Cruz. Spanning 3 hectares, this farm's altitude ranges from 1,750 to 1,900masl, cultivating Catuai, Caturra, Catimor, Bourbon, and Pacamara varietals. Acquired by Simon in 2021, he initially intended to replant, however, the farm's existing crops were surprisingly exceptional, so instead Simon and Merlith aimed to retain and gradually enrich the existing landscape. Handpicked, floated, washed, and pulped in seasoned wooden tanks, the 72-hour fermentation infuses a distinctive character.
Brewing Stronghold
We sat down with Origin’s Director of Coffee, Freda Yuan, who shared her insights on Stronghold with us, plus her recommendations for simple, yet incredibly delicious brewing.
“I wanted to create stripped back recipes for Stronghold that are accessible and easy to experiment with, demonstrating how different brewing methods can bring out different elements of a coffees profile.”
“Stronghold is what I would describe as a classic coffee. Bold and rich, with a real syrupy body that tastes great black or with milk. It’s roasted slightly darker too, delivering a more traditional flavour. A great starting point for brewing speciality coffee at home."
How Freda Brews Stronghold
French Press
What you’ll need:
- 20g ground Stronghold coffee – grind size: medium
- Water: 250g at 85°C
- French Press
Method:
- Boil water and let cool to 85°C
- Add coffee to the French press
- Pour the hot water over the coffee, ensuring all grounds are saturated
- Let it steep uninterrupted for 2 minutes
- After 2 minutes, stir the top layer, remove any floating grounds or foam, and then plunge
- Pour, serve + enjoy
On AeroPress
- Grind Size: Medium
- Coffee: 20g
- Water: 80g
- Temperature: 90°C
Instructions:
- Boil water to 90°C
- Set up the AeroPress in an inverted position and wet the filter paper
- Add 20g of coffee to the chamber
- Pour 80g of water over the coffee
- Stir the mixture up and down 3 times, then left and right 3 times
- Attach the filter cap, wait until 30 seconds, then flip the AeroPress over a cup and press down to extract, you should get about 60g of concentrated coffee
- For a milky, latte-style coffee, add 200g of hot milk, or enjoy the concentrated coffee, espresso-style
“Starting with a bag of pre-ground coffee from our roastery, these recipes serve as a great starting point for getting the most from this excellent coffee. By adjusting a few simple variables like brew time, water temperature, etc, you can experiment with your palate and finding your perfect pour.”
