Composed of 57% Colombia San Fermin (washed), 35% Nicaragua Los Altos (washed) and 8% El Salvador Santa Elena (pulped natural); our current version of Resolute brings together our largest and closest direct trade relationships. We roast Resolute to both highlight the terroir of the coffee but also to create a final cup that is approachable, bold and sweet.

The lead role in this new blend is our new version of San Fermin, developed during our visit to the small neighbouring towns of Planadas and Gaitania that sit along with Rio Claro in southern Tolima last summer. It’s rooted in a familiar flavour profile with high definition. It offers a body that, when roasted in the Resolute style, becomes creamy and hugely coating.

Alongside San Fermin is Los Altos, produced by our longest direct trade partners the Mierisch family. This year, following our trip to Nicaragua at the end of January, we’ve constructed a bespoke version of Los Altos assembled from coffee from the Los Venado, Los Colinas and Las Cuchillas tablons of the farm.

The final component part of this new version of Resolute is Santa Elena, which has been at the heart of our blends for years. Following our processing experiments last year – the Lima Tasting Series – we asked Fernando to process this coffee using the pulped natural method which brings a higher level of sweetness to the coffee.
