Story
Carlos Pola is a third-generation coffee producer and last year he developed the dehydrated honey process used for this coffee. Instead of depulping the same day as picking, Carlos first floated the cherries to remove defects, then put the cherries in a polyester bag and set aside for 2 days. The material of the bag has holes to provide airflow while the cherries are sitting aside. The cherries shrivel after around 3 days of dehydration. This process allowed coffee cherries transfer all the sweetness to coffee beans. Carlos then depulps the coffee and dries the coffee on raised beds for another 18 days depending on the weather.
Coming from a background in textiles, Carlos understands deeply about customers requirement social compliance, but also the wellbeing of his staff. His farm is very organised, instead of planting coffee trees like traditional squares, he renovated the farm and plants the trees in rows, a similar process used in Brazil - the difference being that he plants the tree on the hilly mountain. This provides a great conservation of water and nutrients for the soil.
