Working in collaboration with producer Carlos Pola, San Antoniois the product of a bespoke processing method which transforms the typically overlooked Catimor variety into a high-quality coffee, with vibrant tropical and citrus flavours.

  • This coffee is a testament to the power of long-term relationships and the collaborative and experimental processes they can bring about.

    The rehydrated natural process was born through a dedication to quality and innovation. Cherries are dried on the trees, and then soaked in water, before drying fully on well-ventilated raised beds for 25 days. The resulting coffee was surprisingly fruit-forward, with a transparent mouthfeel and abundant tropical and citrus notes. This process provided an opportunity for a low-ranked variety and unwanted coffee to have a second life, showcasing its true potential and quality.

    It exemplifies the collaborative and experimental nature of Origin’s relationship with Carlos, highlighting how innovative approaches can unlock unique and exceptional flavours from unexpected sources.
