Story

Discover Las Chirimoyas, a hidden gem. Spanning 3 hectares, this farm's altitude ranges from 1,750 to 1,900masl, cultivating Catuai, Caturra, Catimor, Bourbon, and Pacamara varietals. 

Acquired by Simon in 2021, he initially intended to replant, however, the farm's existing crops were surprisingly exceptional, so instead Simon and Merlith aimed to retain and gradually enrich the existing landscape. 

Handpicked, floated, washed, and pulped in seasoned wooden tanks, the 72-hour fermentation infuses a distinctive character. Sun-dried on raised beds for 10 to 15 days, Las Chirimoyas yields an exceptional brew, a testament to tradition and ongoing dedication.

    Lovely beans, ground to perfection in my niche zero. Tried mostly with espresso drinks but also ground some for filter coffee and were lovely in that as well.

    Nice clean cup

    I tend to go for heavy chocolate style rather than the fruity. I purchased this bean because it seemed to be a tentative step away from my usual. It has been a very pleasant experience of no acidity. In the cup as an espresso and flat white to my palate it was nicely balanced in flavour and lighter to my usual. Would purchase again
